The last snow day, that is.
It was fun while it lasted, Mother Nature, but I am ready to get out of my house and get back into my weekly routine!
The upside of being home all day? Actually having the time to make yummy meals and snacks. You know, foods that don’t come out of my bento box!
Rewind to Thursday: the last snow day.
Breakfast for lunch. Maybe it’s because I won’t be having this next week during the vegan challenge, but this was all I was craving!
Veggie & Goat Cheese Omelet
- 1 egg + 2 egg whites
- sautéed peppers + spinach
- goat cheese medallion
I was on kid-duty for the day (since everyone else had to venture out to work)—so I made a trio of kid-friendly smoothies.
Triple Berry Smoothies
Into the blender:
- 2 packages Yoplait Smoothie Mix (Triple Berry)
- 1.5 C. vanilla Chobani
- vanilla coconut milk
They loved it (so did I)!
Insert a few games of scrabble + some general shenanigans that occur with three kids in the house and we were ready for dinner!
My sister and I had more southwest chili-topped salads! I can’t get enough!
Courtney’s is topped with mozzarella; mine is topped with feta. <—I was a little cheese-monster yesterday! I usually don’t eat very much cheese. Again, a function of next week?
Ever since I made bulls eyes for Adam, Sam has been asking for them! He was like: “um, why didn’t I know about these before?”
I was thinking: “well now you know—ask for them as often as you want because they’re SO simple to make!”

Now I just need to get my family to sport them. Come on guys, you know you want to.
Alright friends, I’m off to enjoy the day and find an excuse to go shopping so that I can get out of the house! Who am I kidding, I don’t need an excuse to shop!
