Something about being snowed in gets me craving comfort food. It’s been far too long since I’ve used my slow cooker, so I dusted it off and threw in random items that looked good made a batch of chili!

Southwest Sweet Potato Quinoa Chili

(AKA throw random items into the crockpot & hope for the best chili)

INGREDIENTS

  • 1 large sweet potato (peeled and chopped)
  • 1 can black beans (rinsed & drained)
  • 1 can kidney beans (rinsed & drained)
  • 1 bag Southwest inspired black beans & corn
  • 1 can fire-roasted tomatoes
  • 2 T. green chiles
  • 1/2 C. quinoa
  • 1 C. water
  • 1 C. coconut milk
  • 2 C. low-sodium V8
  • 1/8 C. chili powder
  • 1 t. garlic powder
  • stevia
  • 1/2 T. maple syrup
  • 1 t. cayenne
  • 1 T. cumin
  • salt n’ pepper

COOK ON HIGH FOR ROUGHLY 5 HOURS.

Enjoy with toppings (like Sam & Adam): shredded cheese, Greek yogurt/sour cream, crackers

Or eat it plain. <—like me!

This was a random meal success—so glad I have leftovers!

Last night was super relaxing. We all cuddled up and watched The Other Guys. It was a hilarious movie (<3 Will Ferrell & Mark Wahlberg)—but there were definitely a few ear-muff moments.

Well, either ear muffs or I just make random noises so that he can’t hear what they’re saying. <—haha it’s just a natural reaction when I hear something inappropriate.

I’m currently gulping down sipping on (sounds more lady-like, no?) some delicious new coffee. Thanks to this fabulous girl for the introduction! I’m buying out all of the local Targets as soon as I dig myself out of my snow cave.


I can’t decide which coffee I prefer: blueberry or strawberry shortcake. Once I have it iced, then I’ll know. Huge life problems, right?

Now that I’m sufficiently caffeinated, I’m going to make some breakfast for the fam. I’m sure it will be three different requests as usual. Oh well, it’s a snow day—I’ve got time!
