Single-Serve Coconut Oatmeal Cookie

Hey there friends-I’m about to head out to get my Zumba on, but I just wanted to pop in and share my breakfast with you guys!

I’ve been seeing homemade granola bars all over blogs this past week. We’ll chalk it up to the winter baking bug.

Anywho, I’ve been wanting to make a homemade granola bar version of my own. While I was putting it all together, I realized that mine actually turned out more along the lines of an oatmeal cookie! No problems there—cookies for breakfast? Yes, please.

Stef’s Single-Serve Coconut Oatmeal Cookie

What you’ll need:

1/3 C. old-fashioned oats
1 scoop protein powder (I used vanilla Sun Warrior)
1/2 t. cinnamon
1 mini scoop stevia
1/2 T. coconut oil
1 T. unsweetened shredded coconut
1 t. chia or flax seeds (chia for me!)
3 T. unsweetened coconut milk
1/2 T. whole wheat flour

Blend all your ingredients together using a food processor or blender! If you want your cookie more on the chunky side, then skip the blending and simply stir.

Spray a mini baking pan/oven-safe bowl with non-stick spray. Add your mixture and smooth the top.

Bake at 350 degrees for about 10 minutes or until the edges are browned.

Dress it up with some delicious toppings.

My toppings of choice:

plain Greek yogurt
sliced banana
cacao nibs
cinnamon
almond butter
