I hope you all are having a fabulous Sunday so far!
Sleeping in this morning felt glorious! I woke up feeling refreshed and ready for the day!
Inspired by yesterday’s Pumpkin Frozen Yogurt and my new ingredients, I set out to make my own version of Pumpkin FroYo.
The idea starting forming in my head and my first thought was: peanut flour. Then I thought frozen bananas, and then Greek yogurt…it just snowballed from there into this cold, creamy deliciousness.
Usually, I’d be looking for something warm on an October morning, but with this weather, something cold is just as satisfying!
I introduce to you: Pumpkin-Peanut Banana Soft serve
- 1 Frozen Banana
- 1/8 c. Pumpkin
- 1/8 c. No Salt-added Cottage Cheese
- 1/8 c. Voskos Plain Greek Yogurt
- 1/2 T. Peanut Flour
- Generous Shake of Pumpkin Pie Spice
- Milk (to get it moving, I used Almond)
Put all of the ingredients into your food processor (or blender) and let it whir. When everything looks smooth and creamy, you’re almost ready to dive in!
Before diving in, you need toppings! Well, you could eat it without toppings, but they just make each bite so much better.
I topped mine with Mini Chocolate Peanut Butter cups, simply because I couldn’t stop thinking about them! But I bet this would be great topped with granola, almond butter, cacao nibs…there are so many options!
