Mini Pumpkin Cuffins

I didn’t know what to call these: the box said muffins, but my mouth said cupcakes. So the birth of a new word was necessary: Cuffins. Or should we call them Mupcakes?

Anyway, regardless of what we call them these suckers are delicious. I definitely burned my mouth by devouring one of these right out of the oven!

I bought this Pumpkin Bread & Muffin Mix at Trader Joe’s a few weeks ago, and today was the perfect day to put it to use!

Ingredients:

  • 1 Full Package of Mix
  • 2 Large Eggs
  • 1/2 C. Vegetable Oil
  • 1 C. Water

Preparation:

Combine all ingredients and fold together until smooth.

Ingredients:

  • 1 Full Package of Mix
  • 1 C. Sugar-free Applesauce
  • 1/8 C. Chia Seeds
  • 1/4 C. Coconut Milk
  • 1 container Honey Chobani

Preparation:

Combine all ingredients and blend in the Vitamix (3rd time I’ve used this today!)

Now here’s the key to making these cupcakey.

  • 1/2 C. Butterscotch Chips
  • 1/2 C. Unsweetened Shredded Coconut

Fold in with a spatula!

The best way to get the batter into these mini cupcake trays?

Put it in a baggie and cut a slit in the bottom corner. This way is much easier and less messy as well!

Look at how moist these are!

I’ve already eaten 4 of these! They are SO good warm & fresh out of the oven!

Well I’m full of Mupcakes and a nap is sounding better and better.
