Lunchbox Challenge: the final wrap-up

When I arrived home last night after a long day, I had two boxes waiting on my doorstep! Ah, yes! I love getting mail!

The first package contained something I’ve been dying to try for a while now. I finally took the plunge and ordered some on!








+ coconut milk + stevia = the best protein iced coffee you’ve ever tasted in all your years on this earth.

As for the other package, I’ll tell you about it later. A little anticipation never hurt anyone, eh?

So is anyone else getting a little sick of all these wraps?

Who even decided we would have 4 days of wraps anyway? Oh yeah, that was me. Well I’ve got one last wrap to show you guys! Let’s do this.

But first, let’s do a final wrap round-up from the first week of the lunchbox challenge:

  1. Intro
  2. Wrap 1-sweet potato, pomegranate, tempeh wrap <—sweet
  3. Wrap 2-eggplant, goat cheese, green pepper wrap <—savory
  4. Wrap 3-sweet tofu and green apple filled wrap <—sweet

Do you see a pattern going on here? It was completely unintentional, but I couldn’t break up such a nice flow.

And now I present you with the final wrap to wrap-up the week (wrap it up with a wrap Don’t worry—I won’t quit my day job).

I’ve always loved  Tasty Bite and I’ll have some great Tasty Bite creations coming up this month! (I didn’t say I wouldn’t give you any hints ;))

The Chunky Chickpeas are already seasoned and pre-cooked—so they’re ready to go!

For the spiced Greek yogurt sauce:

Mix together the yogurt + the pictured spices (ginger, coriander, salt & pepper, cumin) and stir it up.

Yum, yum. Be sure to take a taste and adjust the seasoning if you wish. I wanted mine to have a little kick so I added a squirt of sriracha hot chili sauce.

I also ended up dicing up some kale to throw in the mix for added nutrients.

Add a little fun to your lunch with a variety of sides.

  • sliced apple sprinkled with cinnamon
  • peanut butter chocolate chip larabar <—I need to get my hands on the new blueberry flavor!
  • diced veggies: carrot, green pepper, cherry tomatoes

So right after I took this final picture last night—I dug into the chunky chickpea and spiced Greek yogurt wrap. I couldn’t resist. And after getting a taste, I didn’t want to!

This might be my favorite wrap of all four! Yesterday’s sweet tofu and green apple wrap comes in at a close second.

Well, it’s off to work for me!
