Leftovers & Love Crunch

So glad you all love the 7 day vegan challenge! I can’t wait to get started!

What’s the best way to eat leftover chili?

In my opinion, it’s on top of a bed of roasted broccoli, brussel sprouts, and spinach! Get your greens and your beans!

I topped the greens with warm chili + feta + avocado! So good! I think this will be my dinner again tonight!

It’s no secret that I love Nature’s Path. I reviewed their Ancient Grains Granola here. So I was really excited when they sent me their new limited edition Love Crunch!

Dark Chocolate Chunks, Raspberry, Strawberry, Coconut & Flax Granola? Yes, please!

The cereal even has a super cute story behind it:

Love Crunch was born out of love and a passion for both cereal and philanthropy; the first boxes of Love Crunch were created to give as wedding favors to those who helped celebrate the marriage of Nature’s Path Organic Foods founding family members, Arjan and Rimjhim Stephens.

In lieu of gifts they asked each of the wedding guests to do a volunteer community project to post to a web page “The Experience Giving Project.” To share their project with cereal lovers nationwide, they partnered with Whole Food Market’s non-profit Whole Planet Foundation to create an easy way to donate and make a difference in the lives of those most in need.

The only downside to this granola? It’s limited edition. It’s my favorite Nature’s Path granola to date—so I’ll be sad when my box is gone.

It’s going fast considering that the whole family loves it! Sam tried it last night as cereal with Vanilla Coconut Milk and he’s in love! <—should I be jealous?

I tried it on top of a smoothie. Actually, the smoothie had more of an icee texture—so I’ll call it a fruit ice!

Pomegranate Black Cherry Ice topped with Love Crunch

  • frozen pomegranate arils (from Trader Joe’s)
  • frozen strawberries
  • frozen black cherries
  • a little V8 fusion
  • coconut milk

So refreshing!

I’m enjoying my third snow day in a row! The roads have significantly improved—so I’m hoping to get out of the house tomorrow. I’m getting a little case of cabin fever!

It’s been a great opportunity for quality family time though. Many movies have been watched!

I’ve also been able to get in a few great workouts:

Yesterday: 3 miles on the treadmill + arms/abs

Today: Turbofire Fire 45 <—forgot how hard that is! Love it! The kids (Adam, Jamie-my niece, & Courtney-the little sis) even joined in and had a blast!

So it hasn’t been all food and movies in this house!
