Honey Oat Flaxseed Pizza Crust

Holy larabar lovers! You guys really want some larabars! I don’t blame you—I’d be all over the giveaway if it wasn’t my own (dang it!). It’s open until Tuesday—so there’s still time to check it out if you missed it!

Time for FOOD!

The other night I made three separate dinners. Yes, you read that correctly—three separate dinners.

None were too elaborate—so it’s all good.

Adam requested breakfast for dinner in the form of one of my favorite childhood meals. Bulls eyes!

Toast the bread and cut out a small hole in the center.

Warm up a little butter in a frying pan. Add your toast and then break one egg into the hole. Lift the corner of the bread to let the egg cover the bottom half.

Let it cook, flip, and enjoy!

Don’t forget to dip the extra circle of bread in the yolk! <—best part!

He also enjoyed 2 kiwis on the side. <—he likes the skin on. Like mother, like son!

Sam requested chicken parmesan—which meant I had to make my homemade red sauce. <—that totally influenced my dinner choice, but oh am I glad it did!

Served atop a bed of whole grain rotini and topped with pepper jack cheese, parmesan, and Italian seasoning!

I requested (yes, the request was given to myself) a pizza!

My favorite professor at school (who is also vegetarian) has been telling me about this flaxseed pizza crust she makes. She gave me an overview of the basic ingredients and I finally decided to give it a go!

Of course, I couldn’t actually remember most of what she said (besides for flaxseed and olive oil)—so I made my own version!

It took a few tweaks and mid-blend additions, but it came out pretty great!

Pre-bake:

Honey Oat Flaxseed Pizza Crust for one

Combine all the ingredients in a blender/food processor:

  • 3 T. whole flax seed
  • 1/2 T. olive oil
  • 1 t. honey
  • 1 mini scoop stevia
  • 2 T. whole wheat flour
  • 1 T.. oats
  • 1 T. almond milk
  • 2 T. water
  • Italian seasoning

Blend it up until it’s relatively smooth and then flatten it out on a greased baking sheet.

Bake at 350 degrees for about 10 minutes or until the crust browns.

Choose your favorite pizza toppings (bake again) and enjoy!

I topped my pizza with:

  • my marinara sauce <—recipe can be found here
  • spinach
  • yellow + red peppers
  • nutritional yeast
  • goat cheese medallion

This was so good! I loved the sweetness of the crust—can’t wait to make it again and continue improving the recipe!

Dessert? Fruit smoothies blended with V8 fusion.

  • frozen pineapple
  • frozen strawberry
  • frozen pomegranate arils
  • blueberries
  • 1 scoop flax
  • V8 fusion (kiwi-strawberry)

Basically, we cleaned out all of our frozen fruit and made smoothies! Good thing I restocked at Costco last night!

Randomness—my favorite color combo lately: hot pink + army green! The leopard scarf has a hint of army green outlining the spots.

The scarf is from Pacific Sunwear (Thanks Courts!) and the shirt is from Express.

Well, I’m off to Adam’s soccer game!
