As usual, you guys came through with the most intelligent comments on my thoughts about feeling guilty enjoying life while others are suffering all over the world.
Not only were your thoughts intelligent, but they made me look at the situation in a whole new light.
Lisa said that disasters are evidence that we should enjoy every single moment in life—in fact, we owe it to everyone alive to make the best of our own lives.
Colleen put it perfectly when she said that it’s okay to be happy with your own life, yet still feel empathy for those who are suffering.
Leanne pointed out that it would be just awful if we all stopped living when tragedy struck the world. She said that we should all be thankful for the lives we’ve been given, and thus we should make the most of them!
Parita added that it’s important to be thankful for what you have, just like it’s important to keep those less fortunate in your thoughts, prayers, and actions. She also informed me of a new rule on the scene–the platinum rule which states that we should treat others as they want to be treated.
A combination of the golden rule plus the platinum rule sounds pretty great to me!
Yesterday afternoon, I introduced Adam to running. We set out to jog 1 mile without stopping and it was a success! We ran the mile in about 9 minutes and 30 seconds.
I’m so excited because I’m pretty sure I have a new running buddy! We’re going to upload some great music on his iPod (minus the explicitness that exists on my iPod) and we plan to run a few days a week!
Of course, now that he’ll be running he needs to fuel properly—so last night was pizza night in the New Healthy household.
There were two types of pizza on the menu: naan pizza and socca pizza. <—you knew the latter was coming, didn’t you?
Ingredients: Imported Italian Tomatoes, Pure Italian Olive Oil, Fresh White Onions, Fresh Chopped Basil, Fresh Garlic, Sea Salt, and Spices
Of course, I had to spice it up to my liking. I added crushed red pepper, stevia, dried rosemary, and Italian seasoning. I never use jarred sauce without adding my own spices!
Naan pizza is so great! Why? Well for starters, it’s SO simple! Bake it for a few minutes, top it, bake again, and devour! Plus, my family gave it two thumbs up!
Socca Pizza Crust
- 1/4 C. garbanzo bean flour
- 1/4 C. warm water
- 1/2 T. crushed Italian seasoning
- 1 scoop stevia
How to cook it?
- Whisk all the ingredients together.
- Warm 1 teaspoon of extra virgin olive oil in a pan over medium heat.
- Add the socca mixture.
- Cook for about 2 minutes or until the edges are light brown.
- Flip and cook for an additional minute.
- Add your toppings and bake for about 5 minutes at 350 degrees.
Whoever mistakenly labeled pizza as an unhealthy food—check this baby out!
Protein, lycopene, veggies, nutritional yeast—this meal gets a big gold star in my book!
Unfortunately, my spring break is pretty much over. I’m usually on campus Monday-Wednesday, so now I’m back to my normal routine!
I’m super excited for the weekend because I have my first 5k on Sunday! I’m pumped!
I’ll also be starting the Morgan’s Pipes Challenge on Monday! Her vegan challenge was a huge success—so I’m expecting that this will be no different!
I’m following Morgan’s lead and taking on the 100 push-up challenge. As of right now, I do the girly push-ups—so I’m kind of scared!
