Getting Creative With Leftovers

When you have a huge Tupperware of leftover spaghetti squash, it’s time to get creative.

I ended up eating the rest of my spaghetti sauce n’ meatless balls last night, so I needed a different way to eat the squash.

Spaghetti Squash Pizza

Oh my gosh, this was so random but so good!

I topped one multigrain flat out wrap with:

  • hummus
  • spinach
  • warmed up spaghetti squash
  • feta cheese
  • nutritional yeast + crushed red pepper
  • 2 crumbled meatless meatballs
  • sliced cherry tomatoes


I baked it at 425 for about 10 minutes, then I broiled it on high for the last 2 minutes to get the crust nice and crispy.

Seriously you guys, make this! These flavors went together so well. At least my taste buds thought so.

The rest of my “stay at home day” involved laundry and Sons of Anarchy! I ordered the first disc of season 1 on Netflix and I’m already obsessed! Off the bat, it didn’t sound like a show I’d like—but I’m hooked!

I watched the first 3 episodes—and I’m sending it back to get the second disc!

Snacks were a necessary side to my SOA-watching.

They included half of a cantaloupe,

crunch master crackers with laughing cow + TJ’s pumpkin butter,

and lastly, multi grain cheerios with frozen blueberries and coconut milk. This mug times 2. The milk turns purple (blueberry milk if you will) and it was too good to stop at one mug!

Holy snacks! I needed my energy for all that TV watching!

I’m considering doing a workout DVD or jumping on the treadmill. But I’m also considering relaxing and watching a movie. We’ll see.
