I hope you all had a fabulous Saturday! Mine was jam-packed with fun!
I started out the morning with a protein smoothie + an egg muffin.
Mango Pina Colada Protein Smoothie
2/3 C. frozen pineapple
2/3 C. frozen mango
1 C. hemp milk (or almond/coconut would be good)
1 scoop vanilla protein
2 T. unsweetened shredded coconut
So thick and creamy!
Black bean & Egg Sandwich
- 1 organic egg (microwaved in a bowl sprayed with olive oil)
- 1 English muffin toasted & spread with hummus
- spicy black beans
- nutritional yeast
Who needs drive-thrus? Making your own is where it’s at.
Once my food digested a bit I headed to the gym with my son and niece in tow.
I also packed my bags to shower at the gym. <—sometimes it sucks being a girl! Guys would pack fresh clothes and shampoo. Me? I had 2 big bags full of stuff: makeup, blow dryer, face wash, shampoo, body spray, clothes, boots…yeah, you get the picture. That’s not even mentioning clothes for the kids. The receptionist probably thought I was moving in to the locker room.
While the kidlets played basketball in the gym, I did a sweaty cardio workout.
I started out with a fab new piece of equipment called the xRide seated elliptical from Octane Fitness. It’s a cardio machine that incorporates chest presses and leg presses! I did 20 minutes of intervals and it was killer! Can’t wait to use it again.
I followed that with 2 miles of jogging + 1 mile of hills.
I think I set a record time for showering and getting ready because all I could think about was Whole Foods hot bar!!
I totally just throw anything that says “vegan” or “vegetarian” into my box, so I’m not certain of all the names. What I do remember putting in the box:
detox salad <—I need to recreate this!
ginger chile tofu
polenta casserole <—my first time trying polenta. I’m a fan!
+ a bunch more! It warmed my heart and filled my stomach.
I’ve said this before and I’ll say it again. Thank goodness I live 30 minutes from Whole Foods—if it was closer I would be broke!
Insert 3 hours of emptying my wallet at browsing the aisles of Whole Foods & Trader Joes and we were ready for some frozen yogurt!
20 degrees doesn’t stop me from getting my froyo fix!

Time to cracking. It’s “get it together day.” And I have a lot to get together before the semester begins tomorrow morning!
