Easy Grilled Tofu

You know those days where you feel like you’re driving around running errands all day long?

Well, yesterday was one of those days! I thrive on being busy, but boy was I happy to finally sit down last night!

Sam and I started the day with our favorite 3-mile bike route. It has a few killer hills peppered in with some smooth sailing. It’s scenic, yet you’re still getting a little work out. That’s my kind of ride.

I followed up the ride with a 4-mile run and called it a day – in the work out department at least.

The rest of my day (meaning before school let out) involved Old Navy, Five Below, and Costco with my Mom!

Five Below is pretty much a dollar store in which everything is $5 or less. I picked up hula hoops, a kickball, and birdies for badminton. Hello, outdoor fun!

Next up? Fruits & Veggies! There’s just nothing like a produce-stocked refrigerator to put you at ease.

[hummus, spinach, blueberries, strawberries, apples, tomatoes, asparagus, almond butter, squeezable applesauce – you know, the essentials]

I dug into some of the good stuff on the way home.

What? Doesn’t everyone open a huge bag of carrots while waiting in line at the elementary school?

I’m sure the other Moms were doing the same thing.

For dinner, I tested out a couple of new Marshall’s finds.

I don’t know about you – but I’m pretty horrible at grilling tofu. Half of the pieces fall through the cracks and the rest is all beat up.

The grill grid was the perfect solution to my tofu problems! Although I did have to use some strategic grilling since it takes up a lot of space!

Corn + sweet potatoes first, chicken + tofu second. I let the corn and sweet potatoes stay warm on the top grill rack while the protein cooked away. Worked quite well, if I do say so myself.

And the second Marshall’s find was this delicious marinade –

I’ll admit, I’m a little skeptical when it comes to foodie finds at Marshall’s. Why is it there? Is it expired? Was it not a popular seller?

No worries where this sauce is concerned – it was super tasty.

After a few hours marinating, everything was really flavorful.

Grilled tofu (the crispier, the better), grilled sweet potatoes, mini sweet peppers, and strawberries.

Times two.

I literally want to grill out every single night. Not only is everything delicious, but clean up is a snap! No dirty pots or pans – just a few plates and some silverware. Yes, please!

Alright, time to get cracking on my to-do list!
