Totally Random Tuesday

Most days, my thought process looks a little something like this.

Yep, it’s fun to be in my head. My brother also thinks like this – only he has about 1,000 more bubbles. Oh yeah, we have some pretty interesting family conversations which usually end up in someone being angry. What? We’re just passionate.

This is the best snack in the world. Okay, maybe not the absolute best. But it definitely makes the top 10.

Speaking of snacks, lately I’ve been going through some serious snap pea withdrawal because I can’t seem to find them anywhere. When I do find them, I’m cleaning out the shelves. Watch out.

It makes me extremely happy when people enjoy the food I make. What can I say? I just love to feed people.

How about a work out first, then wine second? Problem solved.

When I find hilarious pictures (usually on Pinterest), I immediately send out a group text to my family and friends. A good laugh is therapeutic.

Speaking of cracking up, my family constantly makes fun of me for thinking that I’m hilarious, when [they say] I’m actually not.

There have been several times where I crack a joke or make a sarcastic comment, only to realize that I’m the only one laughing. Whatever. I think I’m funny.

These slippers were a Target impulse buy. I mean, about 90% of my purchases at Target are impulse buys, but these have proven to be the best $5 I’ve spent all month.

Single Serve LOVE Grown Granola Oatcake

Breakfast. It’s one of the main reasons that I love weekend mornings. And when I say mornings, I may actually mean nearly noon because we all know that I’m not always a morning person.

There are also a ton of other reasons why I love the weekends – no work, no alarm, family time, freedom – but for the purpose of this post, let’s just say it’s all about the breakfast.

During the week, breakfasts are grab and go. Coffee is sipped (okay, chugged) from a to-go mug. And the general mood is rush, rush, rush.

Now on the weekends, everything is reversed. I can put some time (and thought) into breakfast and it’s actually served on a plate rather than eaten in the car. Coffee is sipped (okay, still chugged – who am I kidding?) from a nice big mug. And most importantly, the mood is relaxed. Oh weekends, I love you so.

This past Saturday, I started to prep my usual weekend breakfast – scrambled eggs with veggies and toast – and then I thought, wait a minute here. I’m supposed to be challenging myself to change up my meal routine. You know, trying meals that are different and possibly new.

So what better time to try something new than on the weekends when time is aplenty?

It’s not that my old favorite isn’t delicious. Because it is. In fact, I had it on Sunday.

But this meal:

definitely gives my favorite breakfast a run for its money.

It all started with this LOVE Grown Granola.

As a Love Grown blogger, I definitely enjoy my fair share of delicious granola. In fact, I have a handful (or five) pretty much every single day.

But for some reason, this particular bag was left unopened. Not because it’s not tasty (it is) – but when I’m grabbing handfuls, I go for the chunkier versions. The flavors with plenty of cranberries, coconut, and chocolate. Cocoa goodness and sweet cranberry pecan are my absolute favorites.

So how could I use this bag of simply oats? Why for an oatcake of course. An oatcake that keeps you full and is totally delicious to boot.

Single Serve LOVE Grown Granola Oatcake

  • 1 serving (1/4 C.) Love Grown Simply Oats
  • 2 T. old-fashioned rolled oats
  • 1/4 C. egg whites
  • 2 t. cinnamon
  • 4 drops liquid vanilla NuNaturals stevia (or sweetener of choice)
  • 1/4 C. fresh blueberries
  1. Finely blend the Love Grown granola, rolled oats, and cinnamon in a food processor, blender, or magic bullet.
  2. Mix together the egg whites and liquid sweetener. Then add in the blended granola. Mix well.

  3. Finally, fold in the blueberries.

  4. Cook in a warmed pan spritzed with non-stick spray, flipping once.

   5. Top with Chobani Greek yogurt sauce (see below) and sliced bananas.

  • 1/3 C. plain Greek yogurt
  • 1-2 T. vanilla almond milk (to thin it out)
  • stevia + cinnamon to taste

This was so freaking good. And although it was only one oatcake – it kept me full for a few hours! I can’t say the same thing about regular pancakes.

My favorite part? These are so versatile. They can be made with any of Love Grown’s fabulous flavors of granola. Additionally, you could use any type of fruit – raspberries, strawberries, peaches, etc..

And of course, you can get creative with the toppings too! Syrup, protein fluff, or almond butter would all be delicious.

Now that’s what I call spreading the LOVE. Thanks to the amazing people over at Love Grown for making this weekend breakfast possible.

First thoughts? I feel like a ninja turtle. Very weird feeling. I was never a fan of toe socks and these are pretty similar.

Second thoughts? Hmm, these are actually pretty comfy. Maybe I do like toe socks.

Post-run thoughts? Damn, these are pretty great. I feel so much lighter and my feet don’t hurt one bit. Keepers.

Current thoughts? Am I supposed to wear some sort of special socks with these? Because I definitely didn’t.

I don’t think these will replace my beloved Mizunos, but they will certainly make for a nice way to change things up! And I think they’ll be great for hikes.

Welcome to the Madhouse.

Hello, Friday. You snuck up pretty quickly this week.

Doesn’t it seem like the week flies by much faster when you go out during a week night? Or is that just the grandma in me taking the reins?

I rarely, if ever, have evening plans from Monday through Wednesday. Thursday? Sometimes, but still unlikely. So maybe I’m getting old or maybe I’m just being responsible – either way, that’s just how it is these days. And I’m okay with that.

But I’m also okay with exceptions to the norm. And this week was one of those exceptions. On Wednesday night, Sam and I actually had plans. A mid-week date night, if you will.

We started out the night with dinner at a Thai restaurant called Asparagus.

I could have sworn that we had been at Asparagus sometime recently. After a quick look back at my blog archives, I realized that we hadn’t dined there since February 2011 [the beauty of blogging]. On Valentine’s Day, actually. Time sure does fly.

Looking back on that post from last year really makes me wish I had ordered dessert on Wednesday. Flourless chocolate cake? How did I manage to miss that on the menu?

Instead, my dessert ended up being a huge doughy pretzel with cheese and mustard. Well, I only call it dessert because it was after dinner – but maybe it was more of an after dinner snack. That makes it sound more appetizing, no?

Anyway.

For my drink, I ordered an Asparagus Iced Coffee – which I’m told was a mixture of espresso and sweetened condensed milk.

I asked for a heavy on the espresso-light on the milk coffee and it came out perfectly.

So there’s another sign of either age or maturity – or quite possibly both. I went for the caffeine with dinner. Well crap, maybe I’m just boring. And why am I unnecessarily overanalyzing my drink choices from two nights ago? Moving on.

For my entrée, I ordered the Pad Thai with tofu.

As expected, it was delicious. I am obsessed with the sweet and sour tamarind sauce! I think a re-creation is in order – I mean, I am still doing the whole change it up challenge.

Since Wednesday was the Chinese New Year, our waitress also gave us a tin of jasmine green tea as a thank you for dining with them.

Home of the Chicago Bulls!

It’s also been quite a while since I’ve been to a Bulls game, so I was pretty excited to cheer on a team of which I’ve been a lifelong fan.

Seriously, my family was at every other game during the Jordan, Pippen, and Rodman years. My friends and I would secretly check out the players using the binoculars…but that’s besides the point.

The game was super close – Pacers up, Bulls up, Pacers up, Bulls up - but the Bulls ended up losing in the end. The Pacers are pretty damn good this year, so it was a fun game to watch. I may or may not have found a few new crushes out there on the court. Yep, that girl with the binoculars is still here. I don’t think she ever left.

Well, that’s about enough rambling for one day. Counting down the minutes until the weekend! How about you?

Just another survey [20 questions]

1) What is one of your favorite ways to spend a Saturday?

That’s an easy one – sleep in, relax in my pajamas while drinking coffee, have a leisurely breakfast with the family, get a work out in (hiking if the weather permits), maybe do some shopping, and then have a relaxing night. Yep, most of my ideal Saturday would involve relaxing.

2) List your top three favorite TV shows.

  • Dexter
  • Shameless
  • Biggest Loser

3) Would you rather be in pictures or take them?

I’d definitely rather be in them! Especially when it comes to my family – if you get roped in to being the picture taker than you’re in for a whole lot of “retake that one, wait do it from this angle, ugh delete it….”

4) Why do you blog?

I started blogging as way a way to share my story, as well as to inspire others. I quickly realized that along with blogging comes an amazing community and wonderful people. So it’s the desire to share and the amazing community that keep me going.

5) Share five websites that you visit regularly…

Yes, I have two cats that are my babies.

Unfortunately, I am pretty addicted to technology. I would struggle to live without:

  • my iPhone
  • my laptop
  • my car <—my city is not conducive to getting around any other way.

10) What’s your favorite drink?

  • coffee, water, tea, and the occasional diet dr. pepper. I always have a drink in my hand.

Side note: I haven’t had a sip of soda since New Years. My sister and I have a little bet going on and whomever drinks pop first, loses. I will not lose. And neither will she. So I may never have pop again. Yep, we all have the stubborn gene.

11) Do you enjoy cooking?

  • Time permitting, yes! When I’m busy – no. Such is life.

12) Do you have children?

Yes! I have one son, Adam. He’s my pride and joy.

13) What are your favorite hobbies?

Well, blogging of course. Other than that – reading, working out, playing games, shopping, etc.. I’m a simple girl.

14) Would you consider yourself to be shy or outgoing?

Definitely outgoing. As in, I probably talk too much.

15) If you could change one thing about yourself, what would you change?

Well, I’m always looking for ways to improve myself. And I always will be. But if I could change something, I would be less of a perfectionist. I’m working on it – slowly, but surely.

16) Who is your favorite actor/actress?

Eh, I don’t really care. I love movies, but I don’t pay that much attention to the actors/actresses.

17) What’s the coolest thing you’ve done this week?

Programming my research experiment. It has been a long and tedious process, but being able to finally do a little run through of the entire experiment is so rewarding. 2 versions down, 2 to go.

I can’t wait to start running subjects and get some results. Hopefully the results are significant, because I’m presenting my findings at the Midwestern Psychological Association’s conference in May!

18) Do you live near your family or far from them?

Very near. As in, the same neighborhood. Right down the street. I love it.

19) List three of your talents.

  • tuning people/the environment out <—I am probably too good at this. There have been many times where someone is trying to get my attention (Stefanie, Stefanie, STEFANIE) and I just don’t hear it.
  • organizing <—just ask my Mom. She fears my purging and organizing skills.
  • multitasking. always.

20) What is your greatest attribute?

Between this and the previous question, I feel like I’m tooting my own horn. I honestly don’t have one attribute that I could point out as the single greatest. But I’m a go-getter. And in my opinion, that’s a pretty good attribute to have.

a successful garbage bowl

The Insanity work outs definitely live up to their name.

Last night we tried out the Max Interval Plyo DVD and I’m pretty sure that Shaun T. (the trainer) was trying to deliver a slow death through squats, jumps, and a constant burn.

Sitting down has proven to be a little difficult today – which, in my opinion, is awesome. I mean, hey, I’ll definitely spare the ability to gracefully take a seat for some tight buns.

So even though the work out was insane (pun fully intended), we all felt amazing afterwards. Which brought us to the conclusion that should we choose to buy the whole program, the DVDs will be worth every penny. We’ll simply split the price three ways and then cycle the DVDs around so that we can all have our favorites at some point or another. Works for me.

So let’s talk about the rest of Monday – with a focus on food and a side of life. Or maybe a focus on life with a side of food. We’ll see where this goes.

My day started at 6:30 AM, which to be honest, is just too damn early for me. I’m just not a morning person. Actually, I take that back. It’s not that I’m not a morning person, it’s just that the night owl in me tends to get in the way.

I am a morning person in the sense that my days end up being much more productive when I wake up early. For that reason, I like to be up and caffeinated at around 7:30AM. Of course during the week days, this is mandatory because of work for me and school for Adam.

However, like I said, I am not a morning person because of the fact that I am a night owl. I mean, being a night owl and an early bird aren’t really the best mix. In fact, the combination really isn’t even sustainable for long. It’s unfortunate, but true. Geez, this whole sleep being a necessity thing is just such a hassle.

Luckily for me (and my health), I’m finally finding a happy medium between staying up late, waking up early, and still getting a decent amount of sleep. Basically, as long as I’m in bed before midnight, I can wake up early no problem. After midnight? That calls for about 5 alarms. If only I were joking. Want to come live with me?

The day before yesterday happened to be one of those days where I went to bed super late. So, the 5 alarm thing? Yeah, it definitely happened.

As did this.

Latte and girl talk to the rescue. It’s amazing what a little coffee date can do for your energy – both chemically and emotionally. Friendships are good for the soul.

For breakfast, I ordered a bowl of oatmeal on the side.

On the side, because clearly, the latte is the main event. Nothing can come between me and my cup of joe. Plus, this little bowl of oats only kept me full for about 5 minutes, which is why I came home and threw together something much better.

Specifically, an odd, but delicious combination.

This is my latest attempt at a garbage bowl. I know you do it too.

It basically involves tossing all of the nearly inedible food into a bowl and hoping it will be a success.

And this one just so happened to be successful. I mean, normally, I wouldn’t even show you my garbage bowls. You might doubt my sense of taste (and sight).

But apparently, leftover steamed broccoli, Brussels sprouts, spaghetti squash, tomatoes, cottage cheese, hummus, and nutritional yeast result in a pretty tasty combination.

Yeah, I was kind of surprised too. Pleasantly so.

Tell me you do the garbage bowl thing too. In my opinion, it’s the best way to avoid wasted produce.

savory kale breakfast socca [w/an egg]

And here it is – the third meal for the change it up challenge. Despite the fact that three seems like such a small number, it was actually pretty challenging to come up with three new meals this week!

I am so accustomed to making effortless meals that I kind of forgot what it’s like to put a little thought into dinners. But you know what? It’s so darn satisfying to make yourself a delicious new meal. Double points when that meal is healthy AND still easy. 

The first – veggie stir fry with soba noodles and teriyaki tofu. This was my favorite dinner of the entire week and despite the fact that I’m changing things up, this will be a frequent meal in my house.

The second – totally random chilled cucumber soup and roasted kohlrabi. So while the soup was pretty tasty, I’m definitely going to save this recipe for the summer months. Chilled soup and 10 inches of snow don’t mesh very well.

The kohlrabi, on the other hand, can definitely stay. I still have two of those suckers left and I have already have plans for them. Plans that involve my steamer, lemon juice, salt, and pepper. Yum.

The third new meal of the week? Savory socca with kale, laughing cow cheese, cranberry apple butter, and a fried egg.

This meal was actually created out of another attempt to use up the pulp from my juicer. This time, my juice pulp recipe was a success! I can’t get over how versatile (and easy) garbanzo bean flour is.

For the socca:

  • 1/3 C. garbanzo bean flour
  • 1/3 C. warm water
  • 1 T. nutritional yeast
  • 1 T. Bragg’s Organic Sprinkle
  • salt and pepper

Put the flour and spices into a large bowl, then add the water and whisk. Once the dry ingredients and the water are well-mixed, fold in the juice pulp (chopped veggies would work just as well).

Cook it just like a pancake in a warm pan spritzed with olive oil. Flip once.

Top it with whatever your heart desires and enjoy!

I chose laughing cow cheese, cranberry apple butter, and an egg because I’m obsessed with sweet and savory combinations.

This would also be delicious with hummus, goat cheese, scrambled eggs, a little butter and jelly, etc..

Sweat it Out Saturday – all over the place

Lately, I’ve had some serious work out ADD.

A few weeks ago, I was all over the LiveFit trainer. Then last week, I was super into the Body Rock 30 day challenge and Turbofire. This week, Insanity and p90x joined the mix.

I’ve been wanting to give the Insanity DVDs a try since I first heard about them. So when my brother’s friend said he could get his hands on a few, I was all over it! As of right now, we only have the fit test, cardio abs, and max interval plyo - but if we love it, then we may split the cost and buy the whole program.

So even though I haven’t been sticking to any sort of strict work out regime, in my mind as long as I keep my booty moving and get my sweat on – then it’s all good.

Basically, do what ever works for you. I’ve never been able to stick to a rigid plan because I like to be able to do whatever I’m feeling at that moment.

Chilled Cucumber Tofu Soup + Kohlrabi

In trying to change up my meal routine, I’ve noticed something – I tend to change my mind a lot. This is especially true when I’m making up random recipes.

My thought process usually goes a little something like this – check what needs to be used up in the fridge, think of a way to make it work, then change it up until it’s good. We’ll call it the no-plan plan.

So, what did I have that needed to be used? A cucumber. Chickpeas and tofu leftover from dinner a few nights ago. And a tub of Fage Greek yogurt that was on its last leg.

My first thought? Cucumber, yogurt, and chickpea dressing. I mean, hey, cucumber yogurt sauce is pretty common. We’ll just say that the chickpeas were my “new” addition – since this is a change it up challenge.

Once it was all blended up, I realized that the dressing was a bit too runny. Rather than trying to add another ingredient to thicken it up, I thought – well, hey now this would work better as a tofu marinade.

So I dumped my leftover tofu + more chopped cucumber + all the dressing in a bowl and stashed it in the fridge to marinate.

And with one rash decision, there went the dressing. The question was – will this marinade lead to delicious baked tofu? I certainly had my doubts.

So in addition to preparing tofu, I also roasted vegetables for a base.

Butternut squash, Brussels sprouts, and kohlrabi. Kohlrabi (a German turnip) is the vegetable that makes these roasted vegetables unique. See? I’m adding new ingredients to my usual rotation.

To be honest, the stems that connect the kohlrabi root to the leaves kind of freak me out.

So I made certain to cut off every little bit before chopping it up. Yes, I’m weird. It’s okay.

After the vegetables were all chopped, I tossed them in the usual – olive oil, oregano, salt, and pepper.

While the veggies roasted, I worked out and cleaned up the kitchen.

When it was finally time to pop the tofu in the oven to do a little roasting of it’s own, I was starving. So I did what everyone does when they’re starving – I took a bite of the raw tofu in the cucumber yogurt sauce.

And you know what? It was delicious! And so, a chilled cucumber yogurt soup (with chickpeas) was born.

Chilled Cucumber Tofu Soup (or dressing or marinade)

  • 1/2 C. plain Greek yogurt
  • 1/3 C. chickpeas (drained and rinsed)
  • 1/2 C. cucumber
  • 1/4 C. unsweetened plain almond milk
  • 1/8-1/4 C. water
    • Add water as needed. Don’t add too much at the beginning or the dressing will be a bit too runny (like mine was).
  • juice of half a lemon
  • 2 t. oregano
  • 2 T. nutritional yeast
  • salt & pepper
  • drained, pressed, and cubed tofu (about 1/3 of a block)
  • extra chopped cucumber

Blend all of the ingredients except the tofu and chopped cucumber in a high speed blender. Add the tofu + extra chopped cucumber and refrigerate for at least 30 minutes.

So, I really wasn’t joking when I said I change my mind a lot. I guess that’s what happens when you don’t really have a concrete plan to begin with. But hey, this time it turned out surprisingly well.

This was actually my first time having a cold soup, but I’m thinking that it would be more appropriate when the weather is above 5 degrees. Don’t you?
