First Summer Hike :)

It feels like a Monday, but it’s actually a Tuesday. Life is good.

Remember how I said that Tuesdays are shaping up to be my favorite day of the week – yep, that still stands.

A sunny 90 degrees, a day off, and plans to hit up the gym with my brother – it’s going to be a good day. Smile

Yesterday afternoon we ventured over to the Dunes National Lakeshore for our first beach hike of the year!

We are very fortunate to live so close to such a beautiful area – the beaches, the hiking trails, and the area itself are all gorgeous.

We can be outdoorsy and hit up the Dunes, or we can be citified and hit up Chicago. I love it!

I can’t wait until the water warms up so that we can have an all out beach day!

We made certain to point out the poison ivy so that Adam would steer clear!

We hiked trail 9 – which is the longest trail. We also love trail 8 – which is shorter, but much harder terrain-wise!

After our lovely 4 mile hike, we headed to one of our favorite lakeshore restaurants – Bartlett’s. It’s a cute little restaurant with a welcoming feel.

I was pleasantly surprised to see that they had added a few new vegetarian options since the last time I had been there! It’s normally a very meat heavy menu – so I tend to fill up on appetizers and then just order a salad for my entrĂ©e.

Not so today! Adam and I decided to split the Grilled Seasonal Vegetables, Tofu, and Cous Cous.

It came out without the tofu! Apparently, the kitchen did not tell the waiter that they were out of tofu.

Despite the lack of tofu, the dish was still pretty tasty. Adam loved the cous cous and the roasted red peppers!

The waiter offered up desserts on the house for the tofu mishap – ah, of course!

We chose molten lava cake. As my Dad always says – this is so good it should be illegal.

With 5 people eating, we each only got a bite or two. A perfect little taste of dessert without feeling sugar sick.

The night was still young – so we headed over to the beach to watch the sun set and skip some rocks.

Being the smart girl that I am, I decided to write the date in the sand to remember the day when looking back.

Well, apparently I am not so smart because I later realized that I wrote the wrong date! LOL! That’s what a long weekend will do to ya – you lose track of the calendar days and you only know that you have the day off!

Chocolate-Covered Banana Parfait

We finally woke up to beautiful weather this morning.

The past few days have been storm city – which means movies, cuddling, and general laziness. Winking smileWhich is fine by me, but only for a day or two. By day 3, I’m ready to get outside and get some fresh air!

I’m taking full advantage of the final day of the long weekend by getting some Vitamin D!

Which pretty much sucked me in from the first page! They’re coming out with a movie in August and I always try to read the books before I see the movie!

I have a delicious strawberry shortcake iced coffee right by my side.

Before I planted my butt on the back deck, I made a delicious breakfast that’s perfect for a hot day.

Layer 1: cooked then chilled oatmeal.

Layer 2: sliced banana + cinnamon.

Layer 3: Sunwarrior chocolate-banana soft serve [frozen banana + 1 scoop chocolate Sunwarrior protein + a splash of almond milk]

I popped it in the freezer to chill a bit and then I devoured it in about 2.5 seconds. Well, not really, but it was that good.

Chocolate and banana go together perfectly.

Time to resume my reading + sun bathing.

Once I’ve built up my Vitamin D stores, I’m thinking a hike or bike ride is in order.

Let’s catch up.

Hey guys!

Happy long weekend - if you have one – which fortunately I do.

I’ve been quite the busy bee these past few days – which means you’re in for a random picture post.

Those are always fun though, no?

Grill & Chill – Wednesday night dinner.

Grilled eggplant + goat cheese + balsamic vinegar. Try it – it’s delicious.

Peanut flour Cookie dough love fest – a la the fitnessista.

Delicious veggie bowl. I loved the addition of kidney beans + sugar snap peas! I’m all about texture and the peas added a nice crunch!

Dressing is hummus mixed with liquid aminos. Huminos, if you will. Winking smile

New gum my brother snagged at the Candy Expo (he works at a huge candy shop – childhood dream material, no?).

So far, the dessert delights gum has been pretty hit or miss. Key lime pie? Hit! Mint chocolate chip? Miss!

This tastes exactly like a dreamsicle! So if you like dreamsicles then you’ll love it. Which I do, so it’s a hit!

I took a 45 minute spin class on Thursday night and then followed that up with ravioli night at my parents!

Chocolate covered strawberries that my Dad made! I seriously could have devoured that entire tray on my own. I don’t think anyone else would have been too happy about that though.

On Friday night, Sam, Adam, Adam’s friend, and I went to see Pirates of the Caribbean. It was really good! Has anyone else seen it?

Then I woke up at the butt crack of dawn this morning to participate in Kent’s Run!

I signed up at the last minute because it was for a truly awesome cause.
