So glad you all liked Adam and Courtney’s music video – I can’t stop watching it!
It’s been a busy [and fun] few days over here.
Friday
Let’s rewind to Friday – and our Ikea trip! We headed up to Schaumburg for a little shopping and eating action. Eat first, shop second. Then eat again.
My little sis is also a vegetarian, so we each ordered a vegetarian meal and then shared it. The perfect choice for an indecisive pair.
Roasted Red Pepper + Mozz Panini and Spinach + Cheese filled Crepes (a side of steamed veggies for good measure)
After about four hours of Ikea shopping [that store is huge] – we were all hungry for dinner. My purchases were mostly along the lines of organizing (think: shelves, bins) because I’m pretty much obsessed with being organized!
Is it weird that I’m excited to put everything together?
We decided on Big Bowl for dinner!
Grilled Chicken Satays (for the ‘rents) + Vegetable Dumplings + Vegetable Potstickers
For our main entrees, we chose the Stir Fry Bar.
My meal? Tofu + Kung Pao + Jasmine Rice + a myriad of delicious veggies!
Delicious as always!
To make the day even better, there was a Whole Foods nearby! I went in with three things on my mind: coconut milk creamer, nutritional yeast, and blueberry muffin larabars.
I may or may not have bought an entire box of blueberry muffin larabars! 10% off for a full box? I’ll take it!
I also stocked up on coconut milk creamer and nooch from the bulk bins. Perfect.
My Mom found the perfect bag for me!
A great end to a great day. We didn't get home until nearly midnight, which wasn’t so great considering I had a 5k on Saturday morning!
Saturday
I had an early 6AM wake-up call. Even earlier considering that I didn’t go to bed until 1AM. You live, you learn!
My friend Tracy and I ran the Ringing in Spring 5k together – we also ran the St. Paddy’s Day 5k together a few weeks ago.
We both beat beat our first times!
I was 12th out of 50 in my age group with a time of 25:33. <—17 seconds less than my first 5k time. I was pretty happy with this! Especially considering the fact that this course was much hillier than the last.
After the race, we decided a mani/pedi was in order.
We both decided on the European Pedicure which includes a salt scrub leg massage and a mint mud masque. Talk about relaxation.
I chose a pastel purple for my fingers and my tootsies. ![]()
When I arrived home a glorious nap was in order. Dare I say it was one of the best naps I’ve taken in a while. I guess 5 hours of sleep and an early run will do that to you.
Busy few days, right?
I have about a million things to do today, so I better get cracking on my to do list!
