Well today is officially my last day of break. *tear*
I have to head to campus to meet with my professor and the other students who I’ll be doing research with. It’s a group of 4 girls (+ my favorite professor)--so it should be a fun semester!
Tomorrow I have work and then it’s the normal old weekend.
Even though I’m sad to bid this break farewell, I’m also ready to get back into the swing of things.
Call me crazy (heck, I'm sure I'll call myself crazy 2 weeks in to the semester), but right now I’m craving the routine. Plus, I have to admit that I’m excited for what’s to come these next few months!
After a choppy night of sleep, my breakfast called for some extra caffeine (you know, because I’m addicted). Lately, I’ve seen the fitnessista add Starbucks via into her morning oats. While I don’t have via, I decided to simply cook my oats in 1 C. coffee from my iced coffee stash.
^This is my designated iced coffee pitcher. I brew a pot of flavored coffee (French vanilla, pumpkin, whatever I find)—pour it in the pitcher and refrigerate. I simply pour it over ice + creamer when I’m ready for a caffeine pick-me-up. <—I’m pretty much ready for this all day every day. This is especially nice to have in the summer months, but I also love drinking iced coffee year-round.
So, are you skeptical about coffee oats? I was too.
- 1/2 C. old-fashioned oats
- 1 T. chia seeds
- 1 C. French vanilla coffee
- mixed with: cinnamon + stevia
Pre-microwave (for 2 minutes)
I topped the mixture with sliced banana, more cinnamon, and almond butter!
If I didn’t know, I’d think these were chocolate oats!
The verdict?
The first bite was so-so. When your eyes are telling you that you are taking a spoonful of chocolate, but you taste a spoonful of coffee…well, that takes a little adjustment.
By the third bite, the coffee lover in me had surfaced and I was enjoying every spoonful.
By the time the bowl was polished off, I was considering getting another glass pitcher to store coffee for oats!
Skeptical no more.

That's so funny that you had coffee oats because the thought definitely crossed my mind last week when I was making some! Unfortunately I didn't have any coffee at the time (the horror!) but it sounds like something I'd like. I was very skeptical about smoked salmon but it ended up being a part of one of the best lunches I've had in a long time! Have a great last day of break Stefanie!
Coffee oats? Hmmm....I am VERY skeptical, but as with most things, I follow the "if they are good separaetly, they are probably good together" idea, and I'd be willing to give it a try.
Adding coffe in oats is awesome! You can eat your coffe instead of drinking it!

I got that exact pitcher for Christmas! I've been keeping it stocked with iced green tea :)
Coffee definitely brings out the flavor in chocolate. In fact, I put coffee in my brownies and chocolate baked goods and they always come out so delicious!
I was actually very skeptical about sweet potatoes. I never liked regular white potatoes and just just stayed away from sweet potatoes my default, but the first time I decided to give them a try I fell in love and have been hooked ever since! :)
I must try coffee in my oats! ok yes i was def skeptical on the whole spinach in a smoothie--- but you can't taste it!

LOVE coffee flavored oats!! I have a cup of coffee before I eat breakfast in the morning and sometimes if I dont finish it all I will just dump it into my oats instead of water :) I cant wait till it heats up so that I can make iced coffee again!
This sounds great! I bet oatmeal made with chai tea would also be yummy, no? :D

The most recent thing I was nervous about was spaghetti squash-but I LOVE it.

I feel the same way about routine. I love having breaks, but a routine is so great because it really structures my day! Coffee oats sound really great. I really need to buy some oats. I keep seeing them in so many different breakfast recipes!
I was kind of skeptical about raw zucchini, but I tried it today. Loved it!
