Lunchbox Challenge: day 3 {4 days, 4 wraps}

Hey there friends!

Can you take a little guess at what I’ll be showing you this fine morning? That’s right—my lunch [all wrapped up]!

As you may know, I am a vegetarian. Now what kind of vegetarian would I be if I didn’t include a tofu wrap in my 4 days of wraps? Unique? Maybe. But hey, I like my tofu.

Again, if you’re just joining us—get caught up!

  1. Intro
  2. Wrap 1-sweet potato, pomegranate, tempeh wrap
  3. Wrap 2-eggplant, goat cheese, green pepper wrap

Tofu was yet another food that used to intimidate me. I tackled it a while ago—and I’ve used the same preparation method each time since!

I shall call it the drain and press method.

Tofu method

  1. Open the tofu and drain the standing liquid.
  2. Place the block of tofu on a cutting board covered with a clean towel.
  3. Cover the block of tofu with another clean towel + another cutting board.
  4. Place something heavy on top of the tofu to add pressure. Books aren’t only for reading!

Let the tofu press for about 25 minutes. When you remove the towels the tofu is ready to be used!

While the tofu is pressing, assemble your wrap ingredients.

So you could say that I got really funky with this filling. I wasn’t sure how well these flavors would work together—but I rolled with it!

I also added 1 mini scoop of stevia for a bit more sweetness.

Combine all of your ingredients and refrigerate for at least one hour. <—this allows the tofu to soak up the sauce and take on a great flavor (hopefully)

Now it’s time to wrap it up!

In the bento box:

  • 1 whole wheat mini bagel with cream cheese
  • 1/2 whole wheat mini bagel with peanut butter
  • blueberry yogurt (mixed with a little plain Greek for extra protein) + pom arils
  • garlic n’ herb pita chips + feta cheese dip

The snow just kept coming all day yesterday—so it’s a winter wonderland outside.

I’m armed with a blueberry cinnamon crumble iced coffee and ready to tackle the day! (By the way, I bought the coffee at my favorite store—Marshall’s)

Although your wrap looks really good.....I would have added same plain Fage yogurt and some fresh herbs....most likely some dill (or thyme)and parsley!! I think throwing in a handful of fresh walnuts would be good in it as well!!! It would add some more texture and taste great! I love the combination of tofu and apples though... GREAT idea!!!

Thanks for the step-by-step on how to press tofu without an actual press! I know it sounds so simple but I never knew how to do it...

That wrap sounds delicious! Can't wait to hear how it tastes. While I've delved into the world of "Chik'n" I have yet to really eat much tofu and have never prepared it at home. I had no idea it had such an interesting prep process. Lol! You've definitely peaked my interest and I'll be grabbing some on my next grocery run!

Ahh- Marshalls! I'll have to make a trip there so I can stop salivating about that coffee.

I actually think that filling sounds really good, not weird. And I don't even really like tofu! (vegetarian sacrilege...)

Not only is the Lunchbox Challenge a great idea, but your graphics are amazing!! The font is so cute! I’m such a food virgin…I’ve never tried tofu before. Combining it with green apple is really interesting. I wish I could be that creative haha! The main part of my lunch consisted of raspberry preserves and apple butter on a whole wheat bagel thin. A lot better than I expected!

This looks awesome with the sweet apple filling! Oh my!!! I love how you use your school books to press your tofu, lol. I tack a big bowl with all my jarred beans to press mine. I need to get a tofu press one of these day!!

Mmmm tofu! Tofu can either be really nasty or really amazing, it just depends on how you cook it/press it/marinate it/pair it! Haha! looks like you've got a winner!

I LOVE finding coffee at Marshalls and other foodie goodies, that coffee flavor sounds ridiculous. By ridiculous I mean orgasmic, of course.

I think apple is one of the best fruit in the world, add to wraps, quesadillas, stuffing,soup.

I love the flavor combinations in this wrap! When I come back, I am going to try all four wraps!

WOAH!! this is an awesome combo-I am def trying this! My Lunch yesterday was a turkey, lemon and coriander hummus and sprout sandwich on sandwich thin... with greek oygurt and pecan butter on the side! i always seem to jhave greek yogurt with my lunches.. protein punch!

Love this lunchbox challenge!!!! Love seeing what you're coming up with and how you cram everything in to its alloted slots-haha.

All of your week's worth of wraps look really good! I've been eating mostly leftovers for lunch recently, which I never mind, but perhaps I need to go the wrap route as I could use more uncooked food in my diet for variety's sake.

I also always press my tofu, but sometimes I like to take it a step further and make tofu strips. If I want super firm tofu, I simply cut the block into strips and bake them for around 20-30 minutes in a 400 deg. oven. I like this method because sometimes even extra firm tofu is too soft and crumbly.

Also, the George Foreman is pretty great for grilling tofu as well!!

@Andrea It tasted amazing! Especially with the almond butter! Haha the prep process is certainly interesting! Of course, you could always buy an actual tofu press--but hey my way works too. ;)

For your first time preparing it, you might want to grill it/bake it! I like it raw--but it's not for everyone.
