Lunchbox Challenge: day 1 {4 days, 4 wraps}

Good morning lovelies.

Happy Monday! I started off this week on the right foot with a nutrient-packed smoothie.

  • 1/3 C. frozen strawberries
  • 1/3 C. frozen pineapple
  • 1/3 C. frozen mango
  • 1 T. ground flax
  • 1/2 scoop vanilla protein
  • 1 C. coconut milk
  • handful of spinach
  • topped with pomegranate seeds

Week 1 of the Lunchbox Challenge is all about wraps. It’s time to get funky and make your wraps interesting, healthy, and delicious!

  • peanut butter on whole wheat
  • sliced apples (with lemon juice to preserve freshness)
  • garlic & herb pita chips
  • pomegranate seeds
  • juice: apple mixed with 100% pom juice

I NEED a bento box. I never needed one because one of my perks of working for myself is coming home for lunch. But still, they look so cool!

I am off to make a green smoothie now. I love how you topped yours with some pomegranate seeds. Looks so good!

LOL I posted all about my lunches today too! I did a 5 days of sandwiches challenge a while ago but I love your wrap idea, and this one looks ahhhmazing! In my lunch today I've got a quinoa and sweet potato salad with chicken and other veggies. I just finished it.. and now I want more! Can't wait to see the rest of the wraps! :)

Mmm pomegranate seeds are so good for you! What a great idea adding them to the smoothie!

I love wraps, but rarely eat them....I always have a salad for lunch with carrots, spinach, avocado, and a dressing. Sometimes I throw on some roasted chickpeas, seeds, etc.

Your lunch and Adam's both look great! I love wraps and definitely need to get more creative with the contents :)

I had a big salad with avocado, apple, orange tahini dressing, broken pretzels, and warm black beans! Sounds weird...tasted yummy!

Your wrap idea has inspired me! Today I had to use up an everything bagel thin before it goes bad (don't want to waste!) so I added romaine, lean chicken breast slices, provolone cheese, dijon mustard and hot peppers. Also had raw carrots, a few small dill pickles and water!

Planning on including any lettuce wraps in your 4 wraps? That's what's on the menu for lunch for me this week :)

By the way - green smoothies have been all over many of the blogs I follow lately! I will definitely be trying it as soon as I get to the grocery store and pick up some fresh spinach! :)

I had a wrap today and totally thought of you!! Mine had hummus, laughing cow cheese, spinach and bell pepper. I wrapped it all up in my homemade tortilla. It was incredible!

Man, I haven't had a wrap in so long. When I lived on campus, there was this place that made the most amazing wraps. I love mine stuffed with veggies and hummus.

I took the time to peel a pomegranate last night after it was in my fridge for two weeks. It was amazing!!! Unfortunately my first reaction to the sweet seeds was pomegranate margaritas!!! A healthy lunch never occured to me until I saw your post today. LOL

The pomegranate added a great touch! The best drinks were when I got a pom seed with the smoothie! :)

My lunchbox consisted of a bagel thin sandwich, edamame, tomatoes and yellow bell pepper. Your wrap looks delish! I really need to start making those instead of the thins!

I got the cup at Target last year! :)

I am so happy you are doing this! I seriously struggle with lunch ideas every day. You should made a tab at the top of your blog to store them so we can look back for ideas :)
