Well, it’s 2011. And life feels the same. Isn’t it funny how that is? Birthdays, holidays, years—they come and go, yet you remain the same.
While growing up, each birthday I remember being asked “so, do you feel any different now that you’re one year older?” My answer was always no, I’m the same old Stefanie. That answer remains the same. You may get older in years, but not in spirit!
It sounds like a lot of you had some great NYE plans! I can’t wait to hear all about them!
My new year’s eve day started with work. Luckily, I was able to leave at about 2:30 to meet my Dad at the gym. He killed me!
We did a hodge podge of exercises:
- jump rope routine (regular, criss cross, sprints)
- wall ball (squats with a 8-lb. medicine ball)
- weighted bar lunges (3 sets of 20 with 45-lbs.)
- core routine (with medicine ball)
- bench press
- weighted triceps dips
- finished that all up with 1-mile on the treadmill
I came home starving, so I made a huge veggie bowl with spaghetti squash!
That’s 3 meals with one spaghetti squash:
1.) Spaghetti squash with meatless balls
3.) Spaghetti Squash Veggie Bowl
After devouring that delicious bowl, it was time to get pretty for NYE! We spent the evening at my parent’s neighbors—playing games, enjoying yummy food & drinks, and having an all-around good time!
I made Butter Pecan Blondies (inspired by Gracie’s cake batter blondies)!
Oh my gosh, these were devoured about 15 minutes into the party—so good and easy too!
Mix together the cake mix, egg, 1/4 C. of canola oil, 1/4 C. coconut milk, butterscotch chips, and chocolate chips—bake at 350 for about 30 minutes!
I kept my NYE outfit pretty casual.
I really wanted to open the champagne at midnight—which resulted in some pretty funny pictures.

Clearly the guys didn’t think that helping was necessary! haha I got it open eventually and no one was harmed! I consider that a win!

You look gorgeous in those photos Stefanie!! Looks like you guys had a great night. My favourite part of it was spending quality time with my roommates - we didn't do anything super exciting but it was nice to just chill out with them. Have a great time at the game!
