Tofu n’ Hummus Sandwich Filling

It seems like only yesterday that I was using tofu for the first time!

And now I’m using tofu two days in a row? Just consider me a tofu expert. Winking smile

I’m totally kidding, but still I’m happy to be over my tofu intimidation.

If I had a nickel for every time I said tofu in those first few sentences…

Anyway, every Monday and Wednesday I have classes all day. So of course, I pack my lunch [in my handy dandy lunchbox] the night before. I like to be prepared!

Usually, my lunches involve tempeh wraps, apples, and larabars…nothing too exciting, yet all wholesome and delicious.

Last night I knew I wanted to incorporate the remaining tofu into my lunch. The question is: how the heck do you pack tofu to-go without ending up with a soggy lunch?

Well, make a wrap filling and pack all the ingredients separately of course. I got a few funny stares when I whipped out half of my kitchen to make a wrap in the middle of the library, but the outcome was well worth it!

Tofu n’ Hummus Sandwich Filling

*I didn’t set out to make this vegan, but it is. Added bonus?

  • 1/2 block of tofu (drained/pressed/sliced—see method here)
  • 1 heaping T. hummus
  • Mustard (honey, regular, spicy…whatever you like)
  • Nutritional Yeast
  • Paprika

Simply add all the ingredients to a Tupperware and give it shake.

Simple and delicious. Seriously you guys, this doesn’t get any simpler!

I also packed chopped veggies to add to the wrap.

  • Tomatoes
  • Baby carrots
  • Green pepper

I packed wayyy too many veggies, so I ate about half of them plain. I forgot how much I love raw green pepper!

I packed a large La Tortilla Factory whole wheat wrap to fill-up.

And—shocker—an apple and larabar rounded out the meal!

I am a total creature of habit sometimes!

Well after all this food talk, I am ready for some dinner! But first I’m going to hit the treadmill (5k is in less than 2 weeks).

Are you a creature of habit, or do you prefer to change it up? With some things (like workouts) I love to switch it up, but when I find something that works (and I enjoy) I’m a total creature of habit!

Looks like a great lunch! I've never tried a mustard, nutritional yeast combo on "raw" tofu.

I'm definitely a creature of habit!!! Blogging has forced me to switch things up a bit, but there are still the meals that don't get on the blog because if they did, they'd be posted every single day! Your lunch looks delicious and I love your seasonal tupperware! :)

@eatspinrunrepeat Blogging has inpsired me to switch things up too! Although I still post a ton of my everyday meals (big bowls of veggies and hummus just never get old)!
