Hey there! Hope everyone is having a fabulous hump day!
I sure am. One final down. Two to go!
For the past few days, I have been eating my weight in edamame! I know I may be a little late to get on the edamame train, but now I’m fully on board.
I picked up a bag of the frozen, shelled variety at the grocery store the other day and it’s next-to empty!
If my memory serves me correctly, I saw huge bags of edamame at Costco the last time I was there. I hope my memory is correct!
These little beans pack 8 grams of protein per half cup. That’s a huge plus for this vegetarian girl.
They are also a great source of carbohydrates, fiber, omega fatty acids, folic acid, manganese, and vitamin K! <—straight from Wikipedia, my friends.
In a nutshell, they’re pretty dang healthy.
So, I threw some into my usual veggie bowl.
- cherry tomatoes
- sweet peas
- black bean veggie burger
- hummus/nutritional yeast/salsa dressing
I also added some to last night’s homemade Broccoli Slaw Salad.
I’ll admit, I just threw random things in a huge bowl in the hopes of creating a yummy lunch.
The result was quite delicious!
Veggie drenched in a creamy sauce? Yes, please.

Like I said, I threw random things together, so I didn’t do any formal measuring.
Now if you count dollop, pour, and dash as terms of measurement, then this recipe (I use that term loosely) is ready to use.
Those terms certainly count in my book!
- broccoli slaw
- cherry tomatoes
- dollop of plain Greek yogurt
- pour of extra virgin olive oil
- pour of balsamic vinegar
- salt & pepper
- dash of stevia
Simple, delicious, and nutritious. It’s my motto.
Optional: serve with a side of Cognitive Psych notes.
I will definitely be making this again!
Note to self: never again purchase sugar-free Halls. Ever.
You know that little disclaimer on the back of the package that says ‘excessive consumption may have a laxative effect.’ Well, I don’t know about the laxative part, but I’m so bloated that I could easily be mistaken for a pregnant woman. Never again.
Time to hit the books (and hopefully the treadmill <—bloat relief please).
