First and foremost, Happy Birthday Dad!!! Boy, you are getting old. ;) Just kidding, old schmold, you are getting better with age! :)
So this morning I gleefully slept in whilst my man got our son ready for school. How nice of him, right?
Except for the fact that I was gleefully sleeping through an important school meeting, for a club which I am vice president of! Ahh, I feel so irresponsible. I guess last night’s ‘doing nothing is so great’ attitude spilled over onto today! Oops.
I attempted to sooth my anxiety with a big bowl of cereal and a warm cup of coffee. I would call this breakfast, but since it was eaten at about noon, I’ll call it “mini-brunch.”
Cheerios + Nectarine + Almond Milk
Pumpkin Spice Keurig K-cup + Sugar-free Vanilla Caramel Creamer
Go figure, after demolishing said breakfast, my anxiety was still running rampant! So I promptly e-mailed both my professor who oversees the club and the president of the club. As soon as I got a response, my anxiety subsided. I am more determined than ever that this will never happen again!
Enough of the “woe-is-me” stuff, back to the positive stuff!
I ran a few errands with my Mom and sister to get ingredients for my Dad’s birthday dinner. We stopped for a mid-day meal:
Mmm, cheesy!
Dunkin Donuts Egg White Flatbread Veggie Sandwich (This is surprisingly good and the stats aren't too bad either!)
Large Pumpkin Spice Iced Coffee (black)
I was under the impression that I ordered a large coffee, not a bigger-than-my head coffee? I love my caffeine, but dangg. ;) I still consumed every last drop.
We got to my parents and immediately started on dinner. This dinner was my Mama’s baby, so she had all the ideas and I was just along for the ride!
The Set-up:
Salad:
Mixed Greens
Matchstick Carrots
Sautéed white n’ yellow sweet corn + Chickpeas
Feta Cheese
Tossed in this dressing: 1 part EVOO + 1 part Balsamic Vinegar + Organic Sugar
This was by far my favorite part of the meal!
More Veggies:
3 sliced zucchinis
½ red onion
4 roasted red peppers
All sautéed in EVOO.
While it cooked up, I added some parmesan & salt-n-peppa.
Then the final step, bake it with goat cheese layered in! We named this zucchini bake. Original name? Not-so-much! Delicious result? Yes, indeed!
Protein:
Tortilla Lime Crusted Tilapia (For the non-vegetarians, which is everyone besides for my son and I.)
Carbage:
Rice (cooked in the Rice Cooker! I love this thing!) But, who wants to see pictures of plain old rice?
Dessert:
Pineapple Upside Down Cake + Vanilla Frozen Yogurt
So delicious that it went straight to my face and escaped the camera!
Now, I’m about to digest my food and then hopefully go for a run.

Isn't it crazy that DD creation isn't awful?! Finally something besides a yummy donut to choose from.

@Lisa They are worth trying! They also have a turkey sausage veggie flatbread, which I don't eat but I've heard is really good as well!
